We just had FiOS installed. The optical cable connects to an outside box. Copper coax runs into the house, where it is split to the various rooms. Each TV has a set top box (STB) to change channels and to use the internet-fed menu.
Room 1 has a standard NTSC TV, DVD player, VCR, 4-input switch box, and 2 or 3 game platforms. What is the optimal hookup arrangement? Is it possible to record one channel via VCR while watching another. Room 2 has a NTSC TV, DVD player, and VCR. I am usually pretty tech saavy, but I'm beginning to be overwhelmed.

I am usually pretty tech saavy, but I'm beginning to be overwhelmed.Since FiOS converts from light back to RF at the side of your home and uses coax and STBs at your TV sets, the easy way to hook things up is to start by forgetting that fiber feeds your home. Any of the hookup guides (http://cabletv.com/hookupguides.htm) that work for coax will work for you. I'd start with hookup10.pdf for Room 1, and hookup13.pdf for Room 2.
